(Fargo, ND) — A North Dakota State University research team says they found a new use for egg whites. The group says they discovered that the main protein in egg whites can bind and remove harmful chemicals known as PFAS from drinking water. Professor Achintya Bezbaruah led the study and says the ovalbumin in egg whites binds with the chemicals and can be used to filter them out. PFAS was developed in the 1940’s and used in a variety of products but has been linked to cancers and other health-related problems. Bezbaruah says the next step is to develop an actual product to send to market.
